We are… Love, Taco - a chef-crafted taquiza catering experience - and our story starts long before the cart ever rolled into town.
Joshua was born and raised in Napa Valley, surrounded by culinary legends and Michelin stars. He first learned to cook from his mom, Christine, before venturing to culinary school in Vermont to master the art of creating food that makes people pause, smile, and indulge. From owning a riverside restaurant in Livingston, Montana to serving as a private chef for politicians, celebrities, and fly-fishing lodges, Joshua’s career has always been rooted in craftsmanship, creativity, and heart. Oh, and yes, there was even a taco cart somewhere along the way.
Brittney grew up in the sweet simplicity of southern Virginia. Her Granmoma’s crunchy ground beef tacos were a family favorite, and “Taco Night” was sacred. Even then, she didn’t know tacos would someday be her love language! In high school, she found her favorite Mexican restaurant in the next town over and went so often the servers knew her by name. These days, she’s known to her friends as a self-proclaimed taco connoisseur who never misses a Taco Tuesday.
As life would have it and maybe with a little divine timing their worlds collided in Las Vegas. Brittney, now an event planner living in Idaho, was in town for a work conference. Joshua, living in Vegas, was behind the drums at a church service she attended with friends. One glance from across the sanctuary sparked curiosity on both sides and, as fate would have it, they officially met just minutes later... over the church taco bar. Numbers were exchanged, coffee was shared, and a love story began. One filled with LOTS of TACOS!
Over the course of a few years, Joshua & his two boys, Luca & Aiden, moved to Idaho, he proposed, and the two were married in Mexico, sealing their vows with a guacamole unity ceremony. Their shared love for Mexico - its hospitality, beaches, culture, warmth, and food - runs deep. Joshua makes a legendary pico de gallo, Brittney swears by her elk tacos, and together they dreamt of bringing that same authentic joy to the Treasure Valley.
One night while in Mexico, they found themselves at a small, authentic taco cart that appeared each evening at the resort. Sizzling meats, fresh salsas, laughter in the air. They went back every night (for an after dinner snack!). By the time they flew home, they had written a business plan on the plane napkin: bring Mexico to Idaho through a high-end, authentic taquiza experience.
Love, Taco was born.
Today, Love, Taco caters private and corporate events with a high-end taquiza experience inspired by tradition, hospitality, and heart.
